Subject: Foodie Friday: Citrus Grilled Shrimp

Coach Eddie here with Premier Boxing for Fitness.  Ah, summertime... The days are sun-filled and the nights are warm and long. There’s nothing better than inviting some friends over and sharing laughs over a delicious meal.

Kick off the grill season appropriately with this recipe for citrus grilled shrimp. It’s a true crowd-pleaser.

This dish is not only delicious, but it’s so easy too. And let’s be honest, we all could use more easy recipes in our recipe arsenal – especially when entertaining a crowd.

Citrus and shrimp make a wonderful flavor combination. The tanginess of the lemon and lime is taken up a notch with a touch of sweetness from the honey. For best results, let the marinade sit on the shrimp for 15-30 minutes to get the most of the flavor.

This recipe can be served as an appetizer, paired with a colorful salad, or eaten on top of cauliflower rice.

Citrus Grilled Shrimp
Servings:  4    Prep Time:   30 minutes

Ingredients:
1/2cup olive oil
Juice and zest of 1 lime
Juice and zest of 1 lemon
1 teaspoon raw honey
1/2 teaspoon ground coriander
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1pound Raw shrimp peeled and deveined
4 cups mixed cubed vegetables of your choice: squashzucchini, bell peppers, onions, etc.

Instructions:
Whisk the oil, lime, lemon, honey, coriander, salt, and pepper in a large bowl until well combined. Add the shrimp and veggies to the bowl and toss to coat.
Thread the shrimp and vegetables onto skewers.
Preheat a gas or charcoal grill to medium high heat. Grill until shrimp turn pink and vegetables are charred.
Serve immediately.
