When the weather changes and the temperatures start to cool off, I like to start cooking meals that are warm and hearty. Especially soups. Soup is one of my favorite meals. 

To welcome in the Fall season, I thought I'd share my favorite soup recipe and the health promoting properties it offers. 

I hope you enjoy it as much as I do!
FOOD FOCUS: SWEET POTATOES

Sweet potatoes are high in beta-carotene—even higher than carrots. According to Women in Balance, "When we eat produce with beta-carotene, and it is absorbed in our body, we convert it into vitamin A, a powerful antioxidant. Our bodies use vitamin A in many processes such as vision, bone growth, reproduction, skin health, and the immune system." 

Sweet potatoes also:
  1. Stabilize blood sugar
  2. Are high in antioxidants
  3. Boost brain function
  4. Enhance immunity
  5. Promote vision health
  6. Aid in weight loss
  7. Are beneficial for women's hormonal health
Sweet Potato, Apple Bisque
(gluten free, dairy free, vegan)

2 Tablespoons coconut or avocado oil
1 small onion chopped
1 teaspoon Himalayan salt
16 oz. low sodium vegetable broth 
12 oz. water
2 medium sweet potatoes, peeled and chopped
2 green apples, peeled and chopped
1 teaspoon nutmeg (add more or less to your preference; can also substitute with cinnamon)

In a medium to large sized pan, heat oil on medium. Add onion and salt. Saute until tender, about 3-5 minutes. Add broth and remaining ingredients. Cook until sweet potatoes and apples are soft. Ladle into a high speed blender (like Vitamix) and puree. If you don't have a high speed blender, let mixture cool. Top with a few sprigs of fresh parsley and Enjoy!
