Not long ago I was a poo-poo-er of essential oils. Like most people, I like that they smell good which generally makes me feel happy. But so does a scented candle. Why complicate things when you can just light a match?

I had no clue essential oils have real therapeutic value and medicinal qualities. Even though I'm surrounded by people in my field who've been touting the benefits for years, I was oblivious. You know the old saying, "when the student is ready, the teacher appears."

So I became the student. A good friend of mine, Carolyn Jenkins, of My Life Dances, began to mentor me. It all started one day when I said I had a headache that felt like it might turn into a migraine. She handed me a bottle of peppermint oil and instructed me to put a few drops on the back of my neck, occipital area and shoulders. Within minutes, the headache was gone.

That got my attention. Finally something natural that doesn't take forever to see a result.

My next experiment was with On Guard, an immune boosting oil. Throughout the winter, whenever I felt like I was coming down with something I would put a few drops in water and sip it throughout the day. This is the first winter in a long time that I didn't get a sore throat, head cold or flu. Then there was ClaryCalm for hormonal balancing (a.k.a. mother's little helper), DigestZen for stomach upset and that's just the tip of the iceberg.

Food Focus: Fresh Salsa

This is one of my favorite summer snack recipes. It's easy to make and a real crowd pleaser at cookouts. Make a day in advance to let all the flavors blend together.

Ingredients

3 Roma tomatoes, diced
½ small onion, diced
1 small jalapeño, de-seeded and diced (use less if you want less heat)
1 clove garlic, chopped
1-2 Tbsp. cilantro, finely chopped
1 Tbsp. lime juice
salt and pepper to taste

Instructions

Combine all ingredients and let sit in refrigerator for an hour or overnight to let the flavors blend. Use as a topping for fish, chicken or as an appetizer with blue corn chips. Enjoy!
