Our latest jerk chicken recipe comes from Urvashi Pitre's cookbook, Instant Pot Miracle Healthy Cookbook. The chicken is marinated briefly in thyme, oregano, allspice, cayenne pepper, cinnamon, garlic powder, salt, and sugar. This recipe is a great opportunity to use a pot-in-pot method to cook two different foods in the pot at the same time.


Quinoa is the perfect sidekick to complete any meal. We have a roundup of quinoa recipes that are anything but ordinary. It's the versatility of using it for cold salads or hot side dishes that makes one-pot batch cooking ideal for meal prep throughout the week.

Italian Fish With Tomatoes, Capers & Olives

"I made this tonight and it turned out great! I used cod and forgot it could be used frozen so I treated it as fresh fish. Next time I use thawed fish, I will leave the liquid with it rather than throwing it down the drain. We had Italian ciabatta bread with it to soak up the broth. Wonderful! "This was amazing! Doubled the chicken and used boneless/skinless chicken thighs instead. Only used 1tbs of oil in the marinade bc of the fat in the thighs. Kept everything else the same. Added some feta to the salad and some grilled pita bread and it was absolutely perfect. 🙂 Thank you!"
