My conversation with him was so insightful because, during my days as a raw food chef, my focus was bringing beautiful, delicious AND nutrient dense food to the plate.
In the interview, he shares some really great information about the work he is doing in D.C., just giving food away to food insecure folk. He's also a soil expert, and has done research and trials on different varieties of rice - one of the world's most consumed "caloric" foods!
The real kicker in this episode is, he's writing a book about the history of sustainable agriculture and its origins in the fertile crescent in Egypt. Fascinating...
