2019 Jean-Francois Ganevat Chardonnay Les Chamois du Paradis $175 bottle
100% Chardonnay. A brilliant old-vines Chardonnay grown in clay/limestone soils. Very low yields. The wine is raised in demi-muids without any intervention and without and addition of SO2, for around 2 years. During this time the casks are topped off (ouillé) to avoid oxidation. Bottled without fining or filtering.
2020 Anne et Jean Francois Ganevat Savagnin Le Clos $150 bottle
Arbois Savagnin Le Clos 2020 represents the pinnacle of Jean-François Ganevat's single-parcel winemaking philosophy, crafted exclusively from old Savagnin vines rooted in grey marl soils covered with limestone scree. This south-facing parcel in the Arbois appellation benefits from shelter against cold winds, imparting remarkable tension and deep minerality. The wine undergoes natural vinification using direct pressing and indigenous yeasts, followed by over three years of lees aging in neutral demi-muids with regular topping up to prevent oxidation. Bottled without fining, filtration, or sulfur additions, this biodynamic cuvée exemplifies pure terroir expression with extraordinary aging potential spanning decades.
After five years of maturation, the nose reveals precise aromatics of blood orange, candied quince, toasted almonds, and smoky notes alongside verbena, star anise, and citrus. The voluminous palate displays intense minerality with iodized, pastry-like nuances, white flowers, sweet spices, almond, and honey, finishing with immense persistence and vibrant acidity.
2022 Jean-Francois Ganevat Les Chalasses Vieilles Vignes Poulsard $140 bottle
Single-vineyard Poulsard from approximately 50-year-old vines. Incredibly refreshing, supple and sapid. Both the nose and palate burst with rosehip, peony, blood orange, and grapefruit. Spicy and quirky: Ganevat in a nutshell.
