Huevos Diablo Appetizers
Ideal for that Christmas Party!


Not only is this simple - it's a bit unusual and people
love it. It's amazing what the pecans add to this dish.
I took it to a party yesterday and everyone said you
could hardly tell there were eggs in it. Hardly tell?
This is mainly a form of deviled eggs in phyllo cups.
It's the pecans that completely change the whole
character of the dish.

These phyllo cups are at some grocery stores and
not others. The red is tomato phyllo and the green
is spinach phyllo. I bought them at an Albertsons, but
they are not at every Albertsons. You can find them
at certain King Soopers. They are in the freezer
compartment next to pie crusts and puff pastry and
usually come in boxes of 15. If you can't find them, just
buy phyllo sheets, then use a 3 inch diameter jar
lid as a cookie cutter. Then press the phyllo circles
into miniature muffin tins to shape them. Bake them
at 350 degrees about 10 to 15 minutes or until
they just barely start to brown.

I used mild green chiles. The result has just a hint
of heat and a very well rounded flavor.

Huevos Diablo Appetizers

Ingredients:

6 hard boiled eggs, peeled
1/2 tsp yellow mustard
1/3 cup mayonnaise
1/4 tsp salt
1/3 cup diced green chiles
1/2 cup finely chopped pecans
1/4 cup chopped pimentos or red bell pepper
for garnish
24 to 30 mini phyllo cups
(They usually come in boxes of 15 in freezer department.)

Preparation:

1. Finely chop the hard boiled eggs and put in
a medium bowl.

2. Add mustard, mayonnaise, green chiles, salt,
and pecans and blend well.

3. Fill each phyllo cup with a heaping teaspoon of
this mixture. Garnish with the pimentos or bell pepper.

Preparation time: 20 minutes
Makes: about 30
