I tell people about this and they think it sounds awful.
Actually this is really wonderful. The end result is incredibly
flavorful, and you can't tell that there is sauerkraut in
it; plus most people won't realize it's ramen they are
eating.

Very important! You need to start with a really good
salsa and balance it with the chiles you use. I used
a wonderful hot chipotle red salsa, so I added mild green
chiles. If I had been using a mild salsa I would have used
hot green chiles. This is not the place to use up the
leftover salsa that no one likes. I like the 505 chipotle
salsa and I often cook with several Safeway salsas. In
this case I used a homemade salsa.


Adjust this to your taste! The measurements are
basically a guideline. I also tried it with a tablespoon of
sour cream stirred in and shredded sharp cheddar cheese
on top - yummy.

 

Ramen Incognito

Ingredients:

2 packages beef ramen
2 cups water
1/4 cup salsa (ideally chipotle salsa)
1/4 cup diced green chiles
1/4 cup sauerkraut


optional: diced or shredded cooked beef
1 cup cooked vegetables such as onions, carrots, cabbage,
spinach, etc. sour cream, shredded cheese.


Preparation:

1. Prepare the ramen per package directions, except that you
    are using only half the water called for. Be sure to blend in
    the seasoning packet.

2. Mix in the salsa, green chiles, and sauerkraut. Add more of
    any of these to adjust to your taste.


3. If desired, add in any of the optional ingredients (beef or
    vegetables), mix well and serve.



Preparation time: 5 minutes
Serves: 4
