Menetou Salon Domaine Jean Tellier 2017
Sauvignon Blanc
Loire, France

Golden yellow in color with green tints. Assertive on the nose with hints of citrus, peach and white flowers. When swirled the bouquet further reveals its aromatic potential and complexity. The initial taste is crisp and full, soft yet well-balanced thanks to its acidity. Notes of white flowers compliment the fruit aromas found on the nose-fine length and good aftertaste.
Wonderfully accompanies fish, shellfish, poultry and white meat as well as goats’ cheese but works equally well as an aperitif.

Gil Berzal Rioja Crianza 2015
Tempranillo
Rioja, Spain

Gil Berzal Crianza is a wine of dark color, cherry red cherry, with purplish trim and a dense tear that inks the glass. Clean and bright. Memories of fruity aromas, many red fruits (plums, pomegranate, cherries, raspberries) along with ripe black fruits (blackberries). A range of toasted nuances make up the aromatic background of this wine, sweet spices, mineral and smoky touches that give it a fantastic complexity. As it is oxygenated, the aromas become more and more complex, a slight memory of licorice rises in intensity little by little in a perfect balance between fruit and wood.

 Monte Carbonare Suavia 2015
Garganega
Veneto, Italy

The word Carbonare refers to coal and is used to describe this location because the volcanic soils here are black as coal. Produced from 100% Garganega and exposed only to stainless steel in order to preserve freshness, the Tessari family describes this wine as “earth in a glass”—a pure expression of their volcanic terroir.
Straw yellow with considerable intensity and brilliant highlights. This wine is creamy and elegant. It is characterized by freshness and aromas of citrus, herbs, and mineral. On the palate the wine is well-balanced and refreshing with a dry and persistent finish.

Château Tour Peyronneau Saint-Emilion Grand Cru 2014
85% Merlot, 15% Cab France
Bordeaux, France

Classic aromas here with cool reserved cherry, graphite, dark mineral with a sleek palette and fine detail. Feminine lines with a dusty undertone and integrate acidic structure that can hold this wine as it ages for ten plus year. Black cherry, fig and spices at the forefront with high smooth tannins, still gives a nice long finish that is not too intrusive.

January Cheese & Charcuterie Club!
Brought to you by Cultured Slice (Hermosa)!

Pecorino Toscano

An exemplary sheep’s milk cheese produced in the Val D’Orcia (Siena) under strict supervision of the Consortium of Pecorino Toscano. The 6 month Aged version is firm, rich and nutty with a lingering finish hunting of butterscotch. It is created from locally collected sheep’s’ milk during September and June and as it ages it loses its milky white color and takes on a hay-colored, ivory hue. The sweet, silken texture of the original cheese slowly gives way to a sharp, zesty flavor with a brittle texture.

Chicken Liver, Pork and Wild Mushroom Mousse

Organic Mousse aux Cepes is a melange of organic chicken liver, organic cepes, and organic white wine, the new Organic Mousse aux Cepes is smooth in texture and rich in flavor. It is best enjoyed with a full-bodied fruity red wine with minimal influence of oak or a full-bodied dry red wine with rustic and earthy notes.

Valencianos Sea Salt Crackers

These artisanal crackers from Valencia are made by hand - you can even see fingerprint indentations on each cracker! These elongated “saladitos” as they are known in Valencia, are light, crunchy and very firm with a finish that balances the flavor of the olive oil and hints. The seal salt is sprinkled generously on the top.
