This starter culture produces are very creamy, rather thick yogurt that is a bit less acidic than some other cultures. Simply add 1/8 - 1/4 tsp per gallon of milk and follow the basic yogurt instructions.

To make yogurt:

  1. Heat the milk in a cooking pan to 180° F. Immediately remove the milk from the burner.

  2. Allow it to cool to 108-112° F.

  3. Ensure all your utensils are sanitized.  Dissolve the culture in a small amount of milk. Use 1/8 to 1/4 tsp per gallon of milk. Stir this into the pan of warm milk and stir.

  4. If desired, transfer the mixture into containers such as mason jars or other storage/serving vessels.

  5. Store the fermenting yogurt at about 116° F for 4 to 4.5 hours, until the desired consistency is reached.  TIP: An oven with the oven light turned on often provides an appropriately warm space for this fermenting period.

  6. Refrigerate and use for up to 2 weeks.
