| Viking Pilsner Zero Malt is made from 2-row null-LOX (Lipoxygenase) spring barley. The special feature in null-LOX varieties is that Lipoxygenase activity is zero. The LOX enzyme is known to be the primary cause of hot side aeration in the brewing process, introducing enzymatic oxidation even when the brewer diligently avoids splashing and introduction of oxygen in the mash or boil. The absence of such enzyme activity in this malt improves the final flavor stability of beer. It's malt flavor is very close to traditional pilsner malt and usually described as malty, slightly nutty and sweet. It is a great malt for all malt beers with enough character for base malt use in many brewing applications.
