Traditionally, sparkling wine is carbonated in strong pressure tolerant bottles by causing a second fermentation to take place in the bottles. But the process is challenging and off-putting for most hobbyists, and the bottles can be very expensive. Also, the grapes need to be picked early with relatively low sugar content in order to keep the alcohol level relatively low to avoid hurting the yeast during the bottle fermentation. The traditional process can be fun for dedicated hobbyists, but there is a much easier way! Any wine can become sparkling wine in just a few days using a keg and CO2 draft system. With this approach, no early harvest is required. Just make white or rosé wine in the usual way, and keg up as much or as little as you would like to have as sparkling wine.


This method also allows you to easily adjust the residual sugar level to your personal preference by adding sweetener to the keg without fear of re-fermentation. Or leave it bone dry---the choice is yours and can be changed at a later date because the wine remains in a bulk keg that can be opened at any time.
