Located in Ay, Champagne Ayala was founded in 1860 by Edmond de Ayala and was one of the original ‘Grandes Marques’ - the most internationally recognized Champagne brands. The house style is Chardonnay dominant producing a dry, elegant with a light body. One of the first houses to produce a dryer styled Champagne with very low dosage levels.

Caroline guides the winemaking for all the reds under both labels, while Pierre-Yves leads with all the white wines. Their hard work and dedication in the vineyards produce perfectly ripe, concentrated grapes. The reds typically ferment with a significant portion of whole clusters, undergo a short ‘cuvaison’, and age in larger 350L barrels. The wines are translucent in color, with incredible perfume, flavor intensity and length. |
