According to Italian law, and the standards of the Consorzio Tutela Aceto Balsamico Tradizionale, it is forbidden to state any specific number of years on a Balsamic label — unless it refers to one of the official aging categories. The only certified ages are:

12 years minimum for Red and Silver Labels
25 years minimum for the prestigious Gold Label (DOP)

That’s it. Claims of “100-year Balsamic” are not verifiable and often used as a marketing gimmick.
