🍯 Honey shouldn't always taste the same
Think about the landscape around a beehive.
At one time of year there may be Blue Gum flowering.
At another, macadamias.
Then litchis, sunflowers, aloes, citrus or a mixture of veld flowers and other plants.
The nectar source helps influence the aroma, colour and flavour of the honey the bees produce.
That is why:

Blue Gum Honey can taste different again.
And Multiflora Honey can reflect a much wider mixture of flowering plants.

🌼 Right now, the macadamias are flowering
September is an especially interesting time to look at this relationship.
For many South African macadamia cultivars, August and September are key flowering months.
Thousands of small flowers appear along the trees.
And honeybees get to work.
The relationship is valuable in both directions.
The tree provides nectar to visiting bees.
The bees move among flowers as pollinators.
And, where conditions and nectar flows allow, some of that floral
source may eventually be represented in a beautiful varietal honey.
So when you taste a genuine Macadamia Honey, you're not tasting
macadamia nuts that someone put into honey.
You're tasting honey produced by bees foraging in a landscape where macadamia blossom was an important nectar source.
That's a very different idea.
👅 The Real Honey taste test
Here's something we'd love you to try this week.
Take a teaspoon of honey.
But don't immediately put it into your tea or spread it on toast.
Taste it by itself first.
Give it a moment.
Then ask yourself:
Is it light or rich?
Is the aroma floral?
Does it have a delicate flavour or something more pronounced?
Does the flavour disappear quickly — or linger?
Now taste a different varietal beside it.
Suddenly the words “honey tastes like honey” don't work quite as well.
You begin tasting the landscape.
🍯 Try two honeys side by side
If you normally buy the same honey every time, change things up.
Try Macadamia alongside Blue Gum.
Or Litchi alongside Multiflora.
You don't need to be a professional honey judge.
There is no wrong answer.
You may simply discover:
“I like this one more.”
And that is exactly the point.
Honey can be explored in much the same way we explore different
coffees, wines, olive oils and chocolates.
Different origins.
Different seasons.
Different characteristics.
Different favourites.
🍽️ And then take them into the kitchen
Once you start recognising those differences, choosing honey for food becomes much more interesting too.
A lighter or more delicate honey can work beautifully with yoghurt, fruit, breakfast, tea or lighter baking.
A richer honey can be fantastic in marinades, glazes, roasting, sauces, desserts or alongside cheese.
There doesn't have to be one best honey.
There can be a best honey for what you're eating today.
