A new Wisconsin food co-op was worth the wait

OSHKOSH — While she was a student at University of Wisconsin Oshkosh 10 years ago, Bridgette Weber wanted to become an organic farmer.

After some advice from an advisor, she spearheaded a campaign to bring quality food to the area. The idea of a food co-op was born. The thought of bringing quality food to the area intrigued her.

“That was like, wow, if you own a store, you get to choose what’s happening there,” said Weber.

As part of her research, she identified farms in the area that could be sourced for food. “We had this abundance of food at our fingertips but we weren’t using that,” said Weber.

GREEN BAY — “We’re standing at Main Street Square, 1270 Main Street,” Connor Kosmoski of Kos Management said, “We are kind of in the heart of downtown Green Bay.”

The space Kosmoski described is available for applicants to Downtown Green Bay’s Pop-Up Shop Program.

“It’s kind of a win-win situation,” Kosmoski said. “We can help out a business get started on their feet, and then it could potentially flourish into like a long-term lease agreement if that’s something that they would see fit.”

BERLIN - Wisconsin Spice Inc. President Allen Sass never liked ketchup, but he always had a taste for mustard.

A framed Oshkosh Northwestern article from 1986 that hangs in the company's headquarters backs up his claim. It includes a photo of a then 4-year-old Allen enjoying a pretzel rod dipped in mustard.

Sara's Gelato brings a taste of Italy to Fish Creek

It didn’t take Sara Santaga long into her culinary career to realize two things. First, that she wanted to be her own boss and, second, she had a passion for gelato.

“My grandfather is an immigrant from Italy, so I grew up very immersed in the Italian culture on my dad’s side,” Santaga said.
