Last week, we received a fantastic new Instant Pot cookbook on Indian cooking. It's full of authentic recipes tailored for the pressure cooker, including a delicious jackfruit biryani rice dish we're sharing with you today. 

Don't worry if you know nothing about jackfruit! This Indian 'fried rice' or 'pilaf' dish can be made with other vegetarian meat substitutes or with chicken, all covered in the recipe so make sure to check it out.
