Happy Friday!
Cozy winter foods are great and we love using the Instant Pot to create them. Last weekend was full of those comfort dishes. But spring is around the corner and so are lighter meals that are fresh and healthy.
Our meal plan this week is inspired by the people of the Mediterranean region. It focuses on generous portions of fresh produce, whole grains, legumes, nuts and seeds, and some healthful fats like olive oil. It’s also good for your heart and brain.
