Subject: Instant Pot Southwest Rice (Served 5 Ways) + Halloween Ideas

Hey Instant Pot family! 


We love one-pot dishes and even more so when we can serve it more than one way! This simple and delicious Instant Pot Southwestern rice dish is made with sweet corn, black beans, and green bell peppers. It's a recipe that is inexpensive, vegetarian-friendly, and great for making ahead.


You can serve this Southwestern rice in five different ways. It's a great side dish to go with grilled chicken or steak and any salad. Or as a casserole with some melted cheese. A third option is in a tortilla as a burrito with some guacamole or even as a leftover mixed in a salad, also known as cowboy caviar.


A fifth option is to make these crispy, cheesy rice patties as seen in the picture below. Simply combine the rice with cheese and diced pickled jalapenos, then pan-fry until golden brown. Creating this versatile dish is a great way to keep meals interesting while reserving your energy to be with your family.
