Speaking of delicious sides or mains, one of the dishes we’ve recently made in the Instant Pot and fallen in love with is a vegan-friendly, creamy artichoke pasta, which is sort of like a dairy-free version of a mac’n’cheese. It’s hearty and velvety but light enough to avoid the bloat you can often get after a hefty serving of cheesy pasta.
