Subject: Fan Favorites: Minestrone, Creamed Corn, Veggie Stew & Dal

Hey Instant Pot family,

We've had so many lovely comments and feedback from readers recently that decided to share some of our fan favorite recipes in today's email. It always helps to know if someone else has enjoyed a dish or if they have added their own twists to it.

If you cook any of our recipes and you enjoy them, do come back to the blog and leave a star rating and a comment. It helps us know what we're doing right and where we can improve, or perhaps if a recipe needs further testing or better explanation. More importantly, it helps other visitors discover and choose recipes. And we really love to hear from you!

On that note, we wish you a fabulous weekend! Enjoy your Friday and let's get cooking.

Until next week.

"This is such a nice (& easy) minestrone recipe—I’m making again this weekend for my neighbors with some fresh-baked sourdough bread. I have subbed in several types of beans or added more and it’s always delicious."

"Best stew recipe ever!! I left out the spices, using just salt and pepper. I didn’t have any mushrooms, but there are SO many veggies in this stew, I didn’t even miss them. Really good!"

"This was so great! Will definitely be my go-to if I want to make an easy creamed corn or something similar. I was looking for a recipe that required minimal effort and didn’t say anything about heavy cream or half and half – some recipes I saw had said if you use a dairy product with lower fat content, even with the butter, it would curdle. This recipe certainly proved that wrong. This was creamy and delicious. I added ras al hanout to the pot for an additional spice layer like you would in some creamy white sauces. I also mixed in a few cups of fresh baby spinach, which promptly wilted in the heat. I could see how this would work with other frozen vegetables, like green beans or something similar."

"Have tried so many rice salad, but this one is a keeper and will be my go to one. Followed recipe but cleaned out fridge, so added corn, sundried tomato and feta. I also cut sweet potato in small pieces and roasted before adding."

"This soup is delicious. I can’t believe I haven’t reviewed this yet. This was the first recipe I tried with my instant pot a few years ago and I have been making it several times a month since. My family loves this soup so much, even the toddler. The only change I make is I use low sodium better than bullion instead of the bullion cube and that’s just because I don’t use cubes for personal preference. I doubled this recipe for a church function and it was huge hit there too. Always fantastic. Thank you for sharing this!"

"Absolutely top notch loved it never made Dahl before but will certainly be making it again."

"I made this as a hybrid of the Dishoom cookbook recipe and the instant pot recipe. I followed your instructions for part 1 to save some time, and then transferred the lentils to the stovetop to finish. Turned out beautifully!"
