EARTH DAY ECO-FRIENDLY MEALS

This is a fantastic salad to bring to a barbecue party, picnic in the park or to enjoy as a nutritious, balanced meal at home. Instant Pot cooked potatoes and green beans take very little time, just enough to dice up the other ingredients and to whisk up that delicious tangy vinaigrette.

This stew is hearty, thick, comforting and very tasty but the real reason we think it's so good is the number of veggies you'll be getting in each serving. Made with about 10 types of vegetables, it is really is a nutritional powerhouse! 

Warm pasta and lightly cooked vegetables are finished in a lemony, cream sauce - versatile enough to be cooked year-round. It's a simple one-pot dish that only takes about 30 minutes.
