Hey Instant Pot family!
We had so much zucchini, we made SOUP! Yes, it's summer and warm but you can even eat this cold. It is creamy and flavorful, yet light on the calories and it’s vegetarian, gluten-free, low-carb, and keto-friendly. This recipe makes a pretty big batch and it freezes well, just hold back the cream. August will be coming to a close soon so make sure you take advantage of seasonal produce while you can.
