Just made this and it was spectacular. The blending of flavors was the best and the orange zest is absolutely necessary. I did substitute red potatoes and used more carrots and peas. I also added a slurry of 3 T cornstarch and water after the final release.

Letty@lettyskitchen made meatless chile-seasoned pozole, loaded with butternut squash, pinto beans and hominy corn. Garnished with avocado, radishes, pumpkin seeds, tortilla chips, cilantro, and some crumbled salty cheese!

Jenna @celiacsnacks cooked shrimp in coconut oil, added the veggies and the seasoning and added a little bit of Coconut Aminos and made jasmine rice in the @instantpotofficial and it only took one minute for a fast healthy meal! What's your quick go to meal?
