Not everyone is a vegetarian but everyone needs vegetables to be healthy. World Vegetarian Day is Thursday, October 1 so we're dedicating this week's newsletter to vegetarian and vegan recipes. 


Have you tried Meatless Mondays? It's a great way to incorporate some plant based recipes into your diet and not feel like you are missing out. Instant Pot broccoli cheese soup is an easy way to have a family-friendly dinner that hides those green vegetables. With plenty of protein and calcium as well as vitamins and minerals, this soup is actually quite nutritious.


Another great recipe full of flavor is Indian chana masala. You can even cook the brown rice at the same time, making it super efficient meal to make. This is recipe comes from the new cookbook, Instant Pot Miracle Vegetarian Cookbook, by Urvashi Pitre.
