Are you ready to spice things up in the kitchen? We have a few Mexican-themed Instant Pot recipes for you this week! Bring on the fresh produce, warm spices, lime and cilantro and get these easy, fast meals in a bowl on your table. 

Starting off with a sweet corn soup. This dish is adapted from a recipe by Yotam Ottolenghi but we added sweet potatoes for extra body, additional spices and pickled roasted peppers for a fun flavor boost.

Our quinoa salad is a great variation on the more traditional bean or rice salads you get in Mexican joints. Served with cilantro lime dressing, it's a nutritious meal worth making even in the winter.

The Essential Mexican Cookbook. We also have a vegetarian/vegan option for this soup with sweet potato.

Our Barbacoa-inspired pulled pork is so versatile in what you are able to incorporate it with, from tacos to a salad. Instant Pot definitely makes it easier compared to the traditional methods of digging a hole. You can easily pair with our spiced black beans side dish..
