This quick and easy summer Instant Pot recipe is made with pressure-cooked fusilli pasta that is tossed in a fresh and zesty no-cook puttanesca sauce of tomatoes, olive oil, garlic, anchovies, capers and olives. It's fragrant, a little salty, and bursting with summery flavors.

We take a popular American classic, add some Brazilian additions of grated carrot, raisins and corn, perfectly cooked, lightly spiced chicken breasts and an Asian twist of curry mayo dressing. Everything is mixed and served over shredded lettuce. Then BAM a delicious fusion dish.

Frozen fish is cooked in the Instant Pot in Italian broth flavored with classic Mediterranean ingredients: olives, garlic, capers, tomatoes and healthy olive oil. The flavors are tangy and savory with a little sweetness from cherry tomatoes, and it infuses the fish while it braises in the broth.
