What is A2 Milk?

Have you seen milk on the dairy shelf labeled A2? What does this mean? Where does it come from? From an A2 cow? Specific cow breeds, such as Guernsey or Jersey, naturally produce A2 milk.

This results in marketing it as a “heritage” product. Cows produce A1 and A2 milk. The terms refer to the milk protein. These variants are determined by a cow’s genetics.

The A2 variant is considered the original form of beta-casein protein because it is believed to be the type all cows produced thousands of years ago, before domestication and breeding led to the emergence of the A1 variant. At some point, the amino acid proline in A2 milk became histidine in A1 milk.

This mutation altered how the protein is digested. A scientist in New Zealand began researching in the 1990’s the differences between A1 and A2 after noticing possible links between A1 milk consumption and health issues like digestive discomfort.

This led to the founding of the A2 Milk Company which has resulted in global production. The A2 milk we carry at Georgetown is under the A2 Milk Company label.

A2 milk is considered healthier than A1 milk. It is easier to digest, reducing bloating or inflammation in some people, particularly those with sensitive stomachs or lactose intolerance symptoms.

A2 milk may reduce inflammation in the gut and other parts of the body. While A2 milk still contains lactose, some people who experience mild milk-related discomfort report fewer symptoms with A2 milk.

Nutritionally, A2 milk is nearly identical to A1 milk in terms of nutrients and fat content. A2 milk by the A2 Milk Company is whole milk and is free of the rBST growth hormone. It is not organic.

Please remember that A2 milk contains lactose and milk protein, so it is not appropriate for people with lactose intolerance or a milk allergy. Look for the A2 Milk Company brand in our dairy case in the red packaging. Please ask for assistance if needed.

Making Informed Choices

While these lists serve as valuable guides, it’s essential to approach them with nuance:

• Prioritize Organic for the Dirty Dozen: If budget allows, choosing organic versions of the Dirty Dozen can reduce pesticide intake.

• Feel Confident with the Clean Fifteen: For these items, conventional options are generally considered safe regarding pesticide residues.

• Maintain a Balanced Diet: The health benefits of consuming a variety of fruits and vegetables outweigh the risks associated with pesticide exposure. It’s better to eat conventionally grown produce than to avoid these nutritious foods altogether.

• Proper Washing: While washing can reduce some pesticide residues, it’s not a panacea. However, rinsing produce under running water and using a brush for items with firm skins can help minimize residues. Read our new blog, Why ECOS Fruit + Veggie Wash Is A Game Changer?

The Dirty Dozen Foods 2025 List

The EWG (the Environmental Working Group) using testing data from the USDA

(United States Department of Agriculture) from over 46,000 samples of 46 popular

fruits and vegetables found concerning levels of synthetic pesticides-even AFTER

washing and peeling them.

What makes this year’s results so disturbing is the detection of multiple pesticide

residues on individual samples. Some produce samples contained traces of up to 12 different pesticides.

This increases the importance of making informed choices when shopping for your family.

The Clean Fifteen Foods 2025 List

*Note: While sweet corn and papaya rank low in pesticide residues, some may be grown from GMO seeds. If this is a concern for your family, consider organic versions of these specific items.

Key Findings regarding the Clean Fifteen:

• Over 98% of these samples showed minimal to no detectable pesticide residues.

• When pesticides were detected, most samples showed only one type of pesticide residue—multiple residues were found on less than 5% of the Clean Fifteen samples.

• These results remained consistent across different growing regions and seasons.

Why these Foods have Lower Pesticide Residues:

• Natural Pest Resistance-Have defense mechanisms that protect them and minimize the need for additional pesticides.

• Physical characteristics—the structure of these foods provides physical barriers that protect them from both pests and pesticides.

• Growing conditions—whether it is growing up high or in a controlled environment, their growing conditions provide additional protection.
