Team Quartz celebrates Lamington Day

For those of you that don’t know, a Lamington is a sweet snack from Australia. This delicious treat was a kitchen mix-up that became Australia’s most famous culinary icon.

According to the story associated with the cake, Lord Lamington who was the governor of Queensland in the late 19th century, was having his favorite yellow sponge cake served for his guests when the maid-servant accidentally dropped the cake into melted chocolate and coconut was then used to make the cake look appealing and less messy for guests to eat with their tea. The dessert was a hit.

The best thing about Lamingtons is how simple they are to bake. While the traditional lamington cakes were just sponge cake rolled in chocolate and coconut, New Zealand, Eastern Europe, USA have all their versions of the lamington and even in Mauritius with our famous “Gateau Francis” or “Carré Rouge”.

Why celebrate the Lamington Day? Buttery French vanilla sponge cake covered in chocolate and coconut is the perfect combination for a teatime and we love any excuse to eat cake.

Team Quartz enjoyed both the original recipe and the Mauritian version today made by Claudine, she has shared her recipe (see attached) for those who enjoy a sweet treat.
