Mother of Sauces, Class 1-Hands-on

There are 7 basic sauces on which pretty much all other sauces are based. You will learn how to turn any meal into a masterpiece using one of these 7 delicious sauces.

These seven sauces are called the "mother sauces" and to learn them is to open up a whole new dimension in your culinary world! In this class, Chef Gordon will teach you how to make three of the mother sauces in class one and three more in class two, as well as how to extend them into further sauces as well. 

You can take either class 1 or 2 or both.

The class begins with learning to create creamy béchamel, followed by a rich velouté and finish with a tangy hollandaise sauce. The class concludes with preparing a flavorful dinner and a very tasty education!

• Béchamel Sauce - Sauce Mornay Fettuccine
• Velouté Sauce - Sauce Suprême Grilled Chicken with Sauce Suprême
• Hollandaise Sauce - Béarnaise Sauce Roasted Asparagus with Béarnaise

The class begins with learning to create Apple Cider Gastrique, followed by a rich Truffle Cream Sauce and finish with a Mushroom Cognac Pan Sauce. The class concludes with preparing a flavorful dinner and a very tasty education!

• Mushroom Cognac Pan Sauce - Pan Roast Beef Tenderloin with a Mushroom Cream Sauce (If you don't eat meat I can substitute scallops but you must call us a week ahead to make this change)

KIDS' CLASS HANDS-ON PIZZA MAKING CLASS
(recommended age 8 & over)

Kids love to learn, and they will enjoy learning alongside with you on how to prepare pasta from scratch. Our skillful Chef Gordon will help you get your hands all messy making Pizza. We will end the evening with dinner and some yummy homemade ice cream.

Mexican Pozole Cooking Class, Hands-On
Pozole- A Mexican soup that includes hominy and lots of toppings

Upon arrival Chef Gordon will have waiting Sopes, an excellent traditional street snack that you can find almost anywhere in Mexico. 
We will start off the class with everyone making their own Salsa Verde and then Chef Gordon will begin a hands-on experience cooking Pozole, a soup that is so hearty it’s meal on its own! 

Dating back to the Aztecs, Pozole features corn (large hominy kernels), pork, chile ancho, chile guajillo, garlic, onion, and topped off with a fresh salad dressed and lime to suit your taste. 

These days, Pozole is eaten all over Mexico, especially on September 26th, the day of Mexican Independence. 

Our Pozole will be paired with an exotic Ponche, a warm tropical fruit punch with guava and tamarind; perfect for the cold weather. 

After we’ve made our Pozole and Ponche, we’ll sit down and feast together and Chef Gordon will continue the evening making a wonderful traditional Mexican dessert, Bunelos and Champurrado.
