2025 NOVO is a limited edition EVOO extracted on the very first day of harvest usually in early October using 100% Picual olives from Spain. Early harvesting ensures a high concentration of chlorophyll and polyphenols (about 520 mg), giving the oil its intense emerald -green color and exceptional character.
The result of a premium harvest is a robust, peppery oil with remarkable freshness, vibrant notes of green apple and almond, and outstanding antioxidant richness-often considered a "first press" for its purity and quality.
The aroma is medium-green and complex, featuring fruit, grass, tomato plant, and green almond, with striking hints of cut grass and aromatic herbs.
