2012 Clos Lentiscus Penedes

Biodynamic. 100% Samsó (Catalan for Carignan). 75 year old vines. Native yeast fermentation in steel tanks with controlled fermentation at low temperature. Brief oak barrel aging of 3-4 months once the first alcoholic fermentation finishes. Naturally occurring malolactic fermentation. Secondary fermentation in bottle followed by 20 months on the lees. Disgorged and bottled with zero SO2 or other additions. 475 cases produced.
 This cava has very well-integrated effervescence that leaves a pleasant and creamy sensation on the palate. Good acidity that provides for a fresh touch, persistent finish.

Sourced south-facing slopes of the upper and middle Rheingau on vineyards dominated by loess and loam mixed with quartzite. Harvested early and immediately whole cluster pressed at a very gentle pressure. After overnight settling, the juice is racked to stainless steel where it is fermented in a slow and cool fermentation. 340 cs produced.
Dry rosé if full of life. A beautiful balance of classic spring-time aromas and vibrant acidity.

Amazing value for the quality! Just lovely drinking Pinot Noir! Sustainable. Sourced from 8 different Willamette Valley vineyards, all farmed organically or sustainably, with an emphasis on the more floral, delicate side of Pinot Noir. Hand-picked, sorted, and de-stemmed and placed in stainless steel for a 4 day cold soak. Native yeast fermentation with no additions. Aged for 7.5 months on its lees in 80% French oak (only 4% new oak) and 20% stainless steel and then racked directly to tank just prior to bottling.
Cherry and notes, bright and juicy on the palate with tart cherry, baking spices and earth. Lingering finish with great acidity.
