Vire Clesse comes from the town of Clessé on a land located in the heart of the appellation. The vines whose ages range from twenty to eighty years are planted on a slope to the south-east shelf called "Mount". The altitude and good drainage of this Mount preserve the freshness of the grapes. Presses are located amidst the 15 hectares of the Mount, and the grapes are pressed without transport or delay on the site of the harvests. This wine is mostly vinified in stainless steel tanks and 15% from the oldest vines are fermented and aged in oak barrels of 600 liters.

Pierre’s "Grand Cru" is fully fermented in "Burgundian" barrels of 228 liters with a moderate use of new oak not exceeding 20%. The parcels on the climates of high Pouilly and very old vines are those housed in new oak barrels because their concentration and complexity fully benefit from the contribution of wood. A longer aging, until bottling in the late summer, releases the expression of this great terroir.
