Can you believe that we're in the final few days of the holiday hustle and bustle? It seems like only yesterday I was talking turkey. LOL.
After a quick trip to Wal-Mart this morning to buy an iron for Mitchell's mom (yes, she asked for an iron for Christmas 😁), I am almost done with my Christmas to-do list. My plan now is to avoid the stores until after the holidays.
Along with the holidays comes out-of-town guests and lots of extra meals. I thought it would be fun to include a breakfast bake recipe from "Vanishing Vacationers," one of the books on sale this week. (See recipe below)
Despite the the "busy-ness" of the next few days, Mitchell and I plan to take time to reflect and celebrate the real reason for this holiday season...the most wonderful gift we could ever imagine, the birth of our Savior.

Annette’s Amazing Breakfast Bake
Ingredients:
1 pound ground pork sausage (or turkey sausage)
1 teaspoon mustard powder
1/2 teaspoon salt (optional)
8 eggs, beaten
2 cups milk
2 stalks chopped scallion (optional)
7 cups frozen hash browns
8 ounces mild Cheddar cheese, shredded (or sharp cheddar)
Directions:
Crumble sausage into a medium skillet. Cook over medium heat until evenly brown; drain.
In a medium bowl, mix together mustard powder, salt, eggs and milk. Add the sausage, hash browns, cheese, and scallion and stir to coat evenly. Pour into a greased 9x13 inch baking dish. Cover and chill in the refrigerator for 8 hours, or overnight.
Preheat oven to 350 degrees F (175 degrees C).
Cover and bake 45 to 60 minutes. Uncover, and reduce temperature to 325 degrees F (165 degrees C). Bake for an additional 30 minutes, or until set.
