It's #MeatlessMonday everyone!

Time to get in the kitchen, put on some tunes and create plant-based Instant Pot magic. 

If you're not familiar with the Meatless Mondays, then look it up! The concept of avoiding meat on Mondays has been going for decades and is a way to do your bit in the sustainability movement, eat more veggies and just add some variety to your diet. 

Why Monday? Well, it is believed that Monday is the day all health breaks loose. Research shows that Monday is the perfect day to make small, positive changes. The repeating cycle of the week allows Monday, 52 times a year, to be the day people commit to all kinds of healthy behaviours, including dietary changes. 

While we're not strictly vegan or vegetarian over at Instant Pot Eats, we do cook a lot of plant-based recipes and believe that moderation and balance are the keys to health and longevity. In today's newsletter, we share a few delicious, vegan and vegetarian friendly recipes, and dive deep into the world of cooking grains.
